When it comes to organizing food festivals in the city, kebabs certainly rules the roost. So how do you segregate from the rest? Just put a twist in the tail. “The best way to be different is to be truly different”, declared, Asif Ahmed, partner of Sanjha Chulha.  This north Indian 48-cover joint’s kebab twist manifests in the Quirky Kebab month-long festival to commence from August 5 in its ingredients like kashundi and avocado, taste-twitches where veg-chunks move away from the expected savory spectrum and in its presentation.

There are 10 variants – 6 of non-veg and 4 of veg in all.  Murgh Kasundi Kebab vows with predominantly mustard base that one associates with eponymous and typical fish preparations. Both being white meat, the idea sticks. Chicken Makhmali Kebab, comes with creamier texture accorded by extended marinated in near lollipop-shapes. Firangi Seekh employs blanched, chiffonade avocado to good use. Avocado seems to be the emerging ingredient and so is fennel which is to be found here in a subtle hint here in Saunfiya Tikka. Clay-oven baked whole fish appears in menu as Sabud Bhetki. It along with Mutton Burrah – manly-man’s chunk of juicy meat – both new additions to core menu are authentic in recipe unlike the rest which have been meted with the twist in line with the fest fervor.

Kashmiri Seekh Kebab, where dry and canned fruits are grilled together on a seekh with aromatic herbs and spices among others, start off the veg section. It along with Burrah seemed the best eat. Tandoori Salad , nothing novel in making but appeared as a seekh – a nice touch , Dhuandar Tikki – as per name put out alluring charcoal-grilled smoke flavor. It’s also without onion and garlic, thus a ‘Jain Kebab’, if you please. Rounding off the deal was Dahi Ke Sholay – hung curd and onion softness mingled pretty well – do watch the green chili hit.
