Sushi. Sashimi and Tempura – is what comes to top of mind on mulling about Jap fare. But there’s more to it than that of course and a pleasant divergent initiation can be forged at The Wall during ongoing ‘Hazuki Fudo Matsuri’, Japanese for ‘Good Food Festival.
As good a spread as a veritable festival, menu comprises Buta Kakuni (grilled pork Chachu Style), Koebi No Karage (deep fried shrimp dusted with Tempura flour), Tori Tazaitki (breast chicken & wings pan grilled), Vegetable Sushi Roll Maki (veggies in Nori Sheets), Yaki Ebi (grilled prawn in tempura sauce).
Buta Kakuni is pork belly slow pot-roast with kikkoman soy, Mirin, dashi, shallot, ginger juice that forms a sticky dark- brown filament with salt, sour and titch sweetness coming through. Shrimp and prawn representations eats well as does chicken expressions – one mentioned the other being Dengaku Toriyanki (deep fried diced chicken with skin). Acquired taste may be brought in force with Tuna Cheesecake – simply a quadruple- layered cake alternated with yellow-fin tuna and normal cheese slice. A tasting outlier, this cold dish requires a certain culinary appreciation prior to mastication.
And here is the deal : such seminal taste should be in joints not compromising on authenticity as chef Sushanta Sengupta emphasized, : “We have used authentic produce and ingredients from reliable sources and in this festival we’ve used Atlantic (pink) Salmon, Grey Bay sushi rice and have applied requisite techniques”
Now, now nothings ending without no desert. Caramel Banana with Wasabi Ice Cream closes the menu.
